Parma Ham Wrapped Cod...

...this has been on my list of "to cook" recipes for a while now, and I finally got around to it last night!!


It is another recipe from Lisa Faulkner's Book and the latest in a few that I have already tried...the others are here, here, here and here...


So far not one of the recipes from Lisa's book have disappointed...


...and nor does this one!!! It is such a simple dinner, and one that can easily be used as a dinner party main...full of flavour and style...we will definitely be having it again...

 You start off by making a really easy tomato sauce, but this one has a little twist, there's: an onion, chopped and softened to which you add 2 cloves of garlic, a tin of tomatoes, a tsp of sugar, 1 Tbsp red wine vinegar, a handful of chopped black olives and 2 tsp chopped capers...you season it and let it simmer a while, the recipe says 20 minutes, but I left mine a wee bit longer...then you stir through a handful of flat leaf parsley...easy peasy...

...then you get on with the fish, the recipe feeds 4, but I cut it down for the 2 of us (and just saved the leftover sauce to put with some pasta later on)...you take a decent sized cod loin per person and season it well, I cut mine in half...(you may notice 5 pieces of cod on my board, there was a leftover bit from the Small Ones' dinner...so we had that too!!) 
 ...next you take some parma ham - recipe says 2 bits per cod loin, but as my loins were cut in half I used 1 piece of ham per chunk of cod...
 ...and just wrap it around the cod...
 ...they will look like this...
 ...next take either a griddle pan or frying pan, you don't need oil...and cook them...just about 5 mins per  side should do it...
 ...the ham will crisp up wonderfully...
  ...and the cod will become flaky and opaque...
...I served mine on top of the sauce (Lisa says to pour over) with some steamed green beans and saute potatoes..
...and as I said at the start, we loved it, to the extent that Hubby made a point of saying how nice it was!!
...so that takes the total recipes I've tried from the book to 5, and all 5 have been wonderful...so my advice, if you haven't already, but the book! and if you have try this recipe!! Enjoy x
