Dreamy, Creamy Mascarpone...





...Ice-Cream no less...and another Lisa Faulkner special...that's 3 from this book in a week now!!!


To go alongside the Chocolate Almond Torte, Lisa recommends this ice-cream...I was so excited...it meant I could get my ice-cream maker out of the cupboard where is has languished for the last 10 years or so!!! (I told you I was a bit of a gadget freak in a much earlier post!!)...but alas...t'was not to be...said ice-cream machine was broken!!! Un-fixable!!! What to do???



Well there was only one thing to do, make it by hand of course!!!


So, without further ado....Easy Mascarpone Ice-Cream (via Lisa Faukner)


What's even better, is that the ingredients list is only 3 long...


*Mascarpone - 300ml
*Double Cream - 300ml
*Icing sugar - 100g


That's it!! How great is that?



 It was also simple to make...you whisk up the mascarpone until it is smooth and creamy, add in the cream and whisk again, stir in the icing sugar...and stir again...I whizzzzzed it to make sure everything was properly mixed in...pop it into a freezer-proof (lidded) tub and put in the freezer for an hour...
 ...after the hour is up, you get it out and with a fork you need to break up any ice crystals that are forming...this will help you end up with a smooth textured ice-cream...pop it back into the freezer for another hour...
 ...and after that second hour is up do the whole fork to break ice crystals thing again...pop it back in for...you guessed it, another hour!
Once again, get it out, break up the ice crystals (if there are any by now) and put back to finish freezing...the book says to do this about 4-5 times if you can...I managed 4, but only because I had the time to do it...after the 3rd time, mine was looking lovely and smooth...One word of warning...the forking through gets tougher and tougher to do, you really work those arm muscles come the end!!!
Before serving, you need to take it out to soften a little...the book says 15 minutes,but I appear to have a super freezer, so it needed 20 minutes!!! As for the taste...creamy, not too sweet and with a hint of a lemony taste, which is very weird, as there is absolutely no lemon in it whatsoever!!!! Oh, and it went with the rich chocolate torte perfectly...
