Herb and Spice Paneer Fritters...


...This is another of those recipes that I ripped out of a magazine about two years ago, but am only know getting around to trying!!!...this one comes from the Good Food Magazine dated April 2010!!!



They taste subtly herbed and spiced, with the toasted cumin seeds coming through quite well in the taste stakes...and they go well with the Cucumber and Mint Raita I made...and even better with a slightly spicy dip such as a sweet chilli or a spiced mango chutney...



They were really simple to make...there's a little bit of prep involved, but nothing too taxing...

Cooking time: 10 mins
Makes: 12
What you need:
*227g paneer - coarsley grated
*1tsp cumin seeds -  toasted (This is easily done by popping them into a non-stick frying pan for about a minute and toasting until they turn a shade darker...but be careful not to burn them...)
*a handful of chopped, fresh coriander - leaves and stems can be chopped finely for this...
*a handful of chopped, fresh mint leaves
*1 spring onion - very finely chopped
*about a 2 inch piece of ginger - finely grated
*2 eggs - beaten
*2 Tbsp plain flour

 So what to do to make them??


...it's really very simple...pop the toasted cumin seeds, grated paneer, chopped coriander, chopped mint, spring onion and ginger in a bowl and stir to combine...
 ...add the flour and eggs, combine well...
 ...using wet hands (really do wet them, this is a very sticky mixture!!!) to prevent the mixture sticking to you, shape into 12 balls and flatten slightly to form mini flat cakes or patties...


...They can be chilled now until needed, and in fact they are better if you can chill them as it helps to firm them up and hold their shape when frying later on...
Using as little sunflower oil as you can, fry them until golden brown on both sides...I found it easier to fry a few at a time in batches and pop the cooked ones in the oven to keep warm until all were ready...


Serve with lemon wedges and the sauces or dips of your choice...as I said at the start, we had ours with raita, sweet chilli sauce and a mango chutney...and the verdict??


DELISH!!!!


This is definitely a 'keeper' in the recipe world!! But don't expect strong flavours...it's a subtle blend of herbs and spices...delicate and fresh flavours that work well together, and I think would even work well as a main (like the recipe says it can) with some rice and veggies on the side...However, next time I might try baking them in the oven rather than frying them?!?
