Speedy Salmon and Pimped Orzo...
...with the beautiful, sunny weather we've been having lately I decided to spend some time in the garden, getting it ready to sow some veggie crops in the next week or so...as a result I am trying to find simple, speedy suppers for Mr and myself...and not only that, meals that are not too heavy...but not salads all the time.
It was with this in mind that I took some salmon out to defrost this morning...

Mushroom, Artichoke and Olive Pasta Bake...
I found this recipe in my box of 'cut-out-and-keep' recipes, from various magazines...it's from Essentials Magazine, not sure which issue...there isn't a date on the torn out page!!(and I can't find it on their website anywhere to link to...) So I shall just have to share it with you...so here is Mushroom, Artichoke and Olive Pasta Bake...

Quick & Easy Tonight...
...I'm all for slow food, in fact I just love slow braised meats in rich sauces that you can pop in the oven for a couple of hours and pretty much forget about...but there is also a time for fast, simple, speedy suppers...you know, the kind that can go from raw ingredients to delicious platefuls in about 30-40 minutes...

Porcini Pasta Bake..
...this is last night's work night speedy supper...it's another favourite of ours...yes, I am well aware that we have quite a few favourites!!! It's a Simon Hopkinson recipe...I saw him make this on his tv show last year, and went out the next day to get ingredients...it as soooooo easy to make, and soooooo delicious to eat!! I just had to share it with you...
To start it all off you have to take some dried porcinis and soak them in warmed milk, this leaves you with...

Pasta Pronto...
...I tried out a new pasta sauce tonight, when I say new, I mean new to me in the 'making it' sense...it's actually a very, very old sauce! Pasta Puttanesca, or as it translates...no, on second thoughts I'll let you read about it...have a look here... Of course, I am not saying all the information is correct and verified, but I do know the basics are!
I had a look at numerous versions of the recipe, and believe me there are numerous!! Most chefs worth their salt have a version, all of which contain the same basic ingredients, tomatoes, onion, garlic, olive oil, capers, anchovies, chilli and olives..and the traditional way is to serve with spaghetti...in the end I chose to try a combination of this recipe on the Guardian website, by Angela Hartnett and Nigella's version...why? I thought they looked pretty straightforward, and sounded tasty...So what did I do?....this..

Comforting Cannelloni..(.Winter Warmers pt6)
Well, it's another grey and grim day outside, so what better to make for dinner than my Bolognese-Filled Cannelloni...Hubby and I are off out tonight for a belated Valentine's Dinner at Slice Restaurant in Swansea...{a gorgeous tiny place that only seats about 20 people max!! It may be small, but it is a slice of Welsh Heaven!!! (Will post foodie pics tomorrow)}...so I offered to cook Grandma and Pops, plus my two smallish people some of my cannelloni...as always, it is an amalgamation of several recipes, from several people and places that have fused to become the recipe below....

Pasta hugs...
As we seem to be gripped by a cold snap right now, our family are all craving warming, comfort food...you know the sort of things I mean, foods and meals that will give you a great big warming hug on a freezing cold Winter's day...and what is more comforting than a big bowl of pasta bake?
My 2 children wolf this meal down whenever it is put in front of them!! So last night as a last minute supper, (they decided last minute that my idea of sausages and mash was not comforting enough!) I raided my fridge, freezer and cupboards for the ingredients to put it together...What they don't realise is that the sauce is chock full of hidden veggies...and so they are getting about 2 of their "5 a day" in one big comforting hit!
I always seem to have a couple of tubs of my bolognese sauce (I have to point out that yet again this is one of my tweaked recipes, that is more accurately a combination of several Bolognese recipes that I have used over the years) in the freezer at any one time, so a quick defrost in the microwave and off we go!

My pasta bake changes occasionally, but there are a few key elements that never change...
