Porcini Pasta Bake..

...this is last night's work night speedy supper...it's another favourite of ours...yes, I am well aware that we have quite a few favourites!!! It's a Simon Hopkinson recipe...I saw him make this on his tv show last year, and went out the next day to get ingredients...it as soooooo easy to make, and soooooo delicious to eat!! I just had to share it with you...
To start it all off you have to take some dried porcinis and soak them in warmed milk, this leaves you with...

...some wonderfully earthy, porcini infused milk, and a good handful of soft porcinis...
...you're supposed to use pancetta strips, and add them chopped and raw when everything gets mixed together later on, but I didn't have any last night, so I fried off some cubetti di pancetta, drained away the fat that came out of it, and stuck it to one side while I got on with...
...the sauce!! and what a lovely silky, smooth porcini flavoured sauce it is...also very easy to make, but I add a bit more milk to mine, so that it coats a spoon, but runs off slightly...also do this because we like the dish with slightly more sauce than the recipe gives...
...make sure you cook  the pasta while the sauce is cooking...pappardelle is the one you need for this dish...
...now here's the tricky bit...drain the pasta, pop back into the pan, and add all the other stuff, the pancetta (raw or fried, whichever you have!!), sauce and porcini (which I chop a little...) and give it a great big stir!! That's it!!
Pour it all into a buttered oven-proof dish...
...top with some freshly grated parmesan...
...and bake...in my oven it takes about 30mins at gas 7-ish...
Serve with a little more grated parmesan...it goes well with a green salad and crusty bread...just like yesterday's frittata...
