As it is National Vegetarian Week we are going meat-free for the next five days...yesterday I posted the dinner menu for the week...today I am sharing the first of those meals...
This isn's so much of a recipe as a meal idea...and one that can be played around with to suit tastes...it is a favourite work night dinner here, as it literally takes as long as the pasta cooks to prepare and an extra 3-4 mins to mix and serve!!! So it really is super speedy supper! But what is even better is the fact that it only has a few ingredients!!
This one only feeds 2, but can easily be doubled if needed...
So what you need:
*Pine nuts, a decent handful
*Pasta, 200g - we like spaghetti as the pesto clings rather nicely to the strands of pasta...I guess angel hair, tagliatelle or tagliarini would also work well...
*Pesto, the type and colour is up to you, this time I chose red as that was in my cupboard already...
*Green beans, peas would also work pretty well...
*Butter, a knob of...
*Parmesan to serve (optional)...
Start by getting your pasta on to cook...my spaghetti takes about 10 mins which is plenty of time to get everything else in the dish ready...(unfortunately I didn't get a picture of just pasta cooking)...Whilst the pasta cooks, toast off your pine nuts...I just pop mine into a dry (as in no oil) non-stick pan and heat until golden brown...should take about
...about 3 minutes before your pasta is ready, add the green beans (or peas) into the pan, bring back to the boil and cook for 3 minutes..
...strain the pasta and beans (peas) and put back into the pan along with a knob of butter and stir...
...add in the pesto, I used half a small jar for two of us...and mix well to coat the pasta...
...Serve with a sprinkling of parmesan and the toasted pine nuts...
How simple is that for a speedy supper dish...if I feel inclined, I sometimes serve mine with a nice green salad, but last night we just had it as it was with some fresh fruit for pud!!
