The Best Ever Chocolate Chocolate Chip Cookies...

...or at least that's what my two Smallish People call them!! Although I think I may just have to agree with them!!
I'm afraid I can't take the credit for these beauties...they come via Elinor Klivans via Nigella...They are in Nigella's "Nigella Express" book...and as she says, they are the chocolatiest cookies you will ever come across...you can get the recipe on Nigella's Website...right...HERE...


They were really simple to make, and although Nigella says she uses an ice-cream scoop to make her mix into 12 mounds of cookie mix...I used a dessert spoon, and got a few more...all the better for lunch boxes and after school snacks...oh and not forgetting that sly one with a mid-morning coffee...


You will need to weigh out 150g plain flour, 30g cocoa, 1tsp bicarb and 1/2tsp salt into a large bowl...to save on the sifting malarky, I just grab a whisk and gently whisk the dry ingredients...this breaks up all the lumps, takes a minute or two and saves all the fiddling about with sieves!! 
 In another bowl, weigh out 125g soft butter...I microwave mine a wee bit if still too hard...and add in 75g white sugar and 50g soft brown sugar...whisk or beat away until creamed well...as you can see, I decided to do it the old fashioned way this time...i.e. by hand!!
 In yet another wee bowl add 12g dark chocolate, the higher the percentage for this recipe the better...so at least 70% cocoa solids if you can...melt that either over a pan of hot water or carefully in the microwave...
 ...add the chocolate to the creamed butter and sugar and mix well...
 ...add in a large egg and a tsp of vanilla...mix again...
 ...then add in and combine the dry ingredients...mine started to look a bit grainy, but fear not and carry on...
 ...now in case there isn't enough chocolate in here for you, you now get to add a massive 350g chocolate chunks...plain chocolate is specified in the recipe, but if you want to mix it up a little I guess a mix of plain, milk and white would give you a triple chocolate effect...
 ...spoon the mix out onto baking sheets that are lined, and make sure to leave 'spreading room'...these dollops of chocolaty goodness are going to grow...
 ...pop into a preheated oven, Gas 3/170c for about 18 minutes, but test the cookies using a toothpick or skewer first...they will seem a bit 'cakey' but again I say fear not and carry on...if the pick or skewer is clean take them out...
 oh, and there is a chance you may hit a melted chocolate chunk while testing, if you do just test again in a different spot!...cool on the trays for a few minutes...about 10 or so...basically until they don't break apart as you move them onto a rack to cool completely...
 ...or as cool as you can let them get before temptation gets the better of you and you just 'have to' taste one...
...they really are amazing cookies, and although the three bowls may seem a bit much to some, they were simple to mix up and bake...and we will definitely be having them again...
...one more thing, Nigella says that she only cooks half of the formed cookies, she freezes the rest in its raw state, and then has a batch to bake at a later date...
