It's National Vegetarian Week...and here at Sew Appetising we are attempting a Meat-Free Monday to Friday...The menu is all planned and I am off to buy the ingredients this morning...I have some favourite old recipes and some new ones that I got this weekend from Catherine at Raising Veg...so I will keep you all posted on how we do...the first thing I think I will notice is the cost of my shopping, have a sneaky suspicion the weekly shop will be much cheaper without meat on the list!!
So here is the meal planner for the week (as it stands, am liable to chop and change at a moments notice)...
Monday: Spaghetti with red pesto, green beans and pine nuts (an old fave)
Tuesday: Mushroom Risotto (with a twist and a tweak!!! Recipe to follow)
Wednesday: Quinoa with Courgettes and Onions (new recipe - to follow)
Thursday: Squash and Chickpea Stew (another new one...of course will share)
Friday: Lentil and Aubergine Curry - a very, very old fave...may share recipe :-)
Will see how we go with that, of course there will be rice, pasta, salad, breads and veggie accompaniments too...
Not sure about lunches at the moment...will keep you posted though!! Think it may be soups and sandwiches if the weather doesn't improve here!! Would love it to be salads instead!!!
Right off to finish shopping list!!! Got a busy day ahead, as I also came home from Catherine's with cuttings to plant and planters to fill...
