Chewy Cereal Bars with a "Tweak"...

...a while ago I posted the recipe for my home-made Chewy Cereal Bars...which are lovely (even if I do say so myself) and get made every other week in our house!!! But I decided enough was enough..I needed to have a little play around with the idea...


...Which is exactly what I did this morning!! I had been given (by my 10yr old) the last part of a bag of almost completely crushed Special K cereal at the weekend...and rather than bin it, as she would do or sieve it as my MIL would do...I decided to turn it into these...
The basic recipe is almost the same as the original ones, but I used 200g of oats and 75g special K cereal (slightly crushed)...I upped the coconut to 85g (just because I like it!!) and used 100g each of nuts (almonds and macadamias) and fruit (raisins and craisins)...I reduced the seeds to 50g, but the tin of condensed milk stayed the same...
...the mix was slightly drier than the original one...but I managed to get everything coated in the warmed condensed milk
...although it did seem to yield rather more mix than before...
...using the cling film trick I showed you in the original post worked at getting it pressed firmly into the tin...
...it took the same 50-60 mins to bake in a really low oven, Gas 1/2 or 130c until golden...
...the texture was the same...
...as for the taste...
...well Hubby and I will both be having them quite happily for a quick 'grab-and-go' breakfast...or a 'fill-the-gap' snack...
