Mexican Madness #4...Tacos...




Number 4 and the final one...this is a two for one deal...a Mixed Mushroom one and a Courgette and corn one....Both are full of fresh flavours and super simple to make!


The book says all the taco fillings will serve four people as a starter, but if adding the Green Rice and Refried Beans (as we did) will do the same number as a meal... 




So, let's start with the Mushrooms...For this recipe you need a mix of mushrooms about 750g...I used Oyster, Shitake and chestnut...but other can be used...
Take a knob of butter and a tablespoon of butter and fry the mushrooms on a high heat for about 10 minutes or so - basically until they release all their lovely juices and they start to evaporate...season them...add another knob of butter (and another tablespoon of oil if you want - I didn't), 2 shallots that are finely chopped and 2 crushed (or finely chopped) cloves of garlic...
...cook until the shallots are softened...then sprinkle with a small handful of chopped fresh tarragon (I couldn't get fresh so had to use dried) and don't forget to taste for seasoning...
To serve, sprinkle with some chopped fresh parsley and grated pecorino cheese...You can also add some truffle oil when the shallots go in, and serve it with some chipotle paste...
The Courgette and Corn filling as even more simple to make...if that's possible!!! Take 2 tablespoons of olive oil and heat in a large pan...to this add2 finely chopped shallots, 1 clove of garlic (crushed or finely chopped), a green chilli also finely chopped, about 700g diced courgettes and the corn kernels form 1 cob of corn...
...then all you do is stir fry this until the veg is slightly coloured and the onion translucent...when you get to this point, stir in a tablespoon each of fresh chopped mint and chervil...add a good squeeze of lime juice - about 1/2 a lime...
...and sprinkle with a handful of crumbled feta cheese....

Both these fillings are great in tiny tortillas as tacos as we had them...or you could use them as quesadilla fillings with some chipotle paste...or even as a tasty snack the next day with some of the green rice - as we found out!!
