As you know from the earlier post, this Friday's menu theme was Mexican Madness...
...So to start what else could I make but Guacamole and tortilla chips...
Tomasina's Classic Guacamole looked simple and full of great flavours, with a couple of 'tweaked' versions thrown infor good measure...
First of all you need to make a paste of 1/4 of a red onion, 1 green chilli and a teaspoon of sea salt...make sure the onion and chilli are finely diced to start, it makes life a lot easier...I didn't read this bit of the recipe and took ages grinding away in my pestle and mortar!! This will give you the base flavours that get added to the avocado...
You need 2-3 Haas Avocados, I used 2...it was plenty for us (and we had leftovers)
So scoop out the flesh of the avocados and roughly mash with a fork...
Add the onion, chilli, salt paste to the avocado and mix...not too much though, you want a few chunky bits in there...a handful of coriander and a squeeze of lime juice and you're pretty much done...taste it and season if needed...I found mine needed a bit more lime...so the juice of 1 and 1/2 for us...
We opted for one of the 'tweaked' versions at the bottom of the basic recipe...which was just the addition of a very ripe tomato that had been deseeded and diced...(you are meant to also add a clove of garlic to the paste you make at the start, but I didn't)
I'm not a big avocado fan, but after enjoying the guacamole at Wahaca I had to give it a go at home...and it was just as good!!! (Even if I do say so myself!!) We had ours with ready made tortilla chips, I haven't quite gotten to the stage of making my own - YET!!!
