Cucumber and Mint Raita...

...Mmmm cool, crisp cucumber, zingy mint and creamy yogurt...the perfect accompaniment to the Paneer Fritters and Pea and Potato Samosas...


And so very very simple to make...
First a teeny tiny bit of prep...take a tsp of cumin seeds, roast them and then grind in a pestle and mortar until a fine powder...All you need is about a 5 inch length of cucumber that you need to grate and then squeeze as much liquid from as possible...I popped mine in a sieve and pushed down on it, then left it for about an hour to drain...giving it a squeeze now and again...!!!

Then you chop up some fresh mint - about 3 Tbsp and add to the cucumber...then add some natural yogurt, I use low fat and you don't need posh branded yogurt, cheap and cheerful is great for this recipe...mix it up until you like the consistency...about 300ml give or take...add the cumin powder a bit at a time, tasting as you go...season and chill until needed...the best cooling side to go with spiced curries...
