Children's Choice...







After Alex had the choice of what I would bake for the lunch boxes the other week, it was only fair that Emily got to choose something too...so the trusty "500 Cookies" came out to play...and this is what she chose....







...Home Made Jammie Dodgers...

This is another simple biscuit recipe, you literally put everything (175g softened butter - unsalted, 300g plain flour, 50g caster sugar, pinch of salt and 1tsp vanilla) in the processor and whizzzzzz...
 ...until you have a sticky buttery dough...
 ...which you wrap and chill for about 45 mins..
 ...before rolling and cutting out your biscuits...don't forget, half need to have the little holes in for the jam to peep out of, so count carefully...
...put into the oven - Gas4/175c...
 ...and bake for 10-12 minutes, cool...
 ...make sure you have pairs...Yay!! I counted right!!!
 Sandwich with the jam of your choice...(the recipe says to sandwich then pipe more jam into the holes...but I didn't bother...there was enough peeping out of mine!)
Dust with icing sugar, and enjoy... :-D
The recipe also says that the filled biscuits will last about 3 days in a sealed container, but unfilled, about a week...Like they will last that long!!!
