What to do with leftover chicken...?

So I got home yesterday and looked in the fridge, knowing that tonight was leftover chicken night...My usual speedy solution is 'Cheats Chicken Pie Filling' which consists of sauteing a chopped onion, adding some garlic, some chopped bacon and cooking for a few minutes...add some chopped mushrooms and the chopped cooked leftover chicken, to this add a tin of condensed soup, your choice of flavour (mushroom, celery and chicken are all good ones to add), add a little milk to thin and cook until the chicken is heated through...either serve with a pastry top or as we do more often than not, with rice of mashed potato...But not last night!!!
Last night I fancied mixing it up a bit!! So a google later and it was this chicken risotto recipe that caught my eye...as in previous posts, if there is a published recipe that I am using, I won't type it up again...if you want to know why read this article...there is a minefield out there for food bloggers, and I am trying really hard not to get caught up in it! However, I did adapt the recipe to use cooked leftover chicken rather than the uncooked chicken they use...
After softening the onion, garlic and red pepper, I added the leftover cooked chicken...
Then in went some risotto rice, I used Carnaroli for a change...
After it had cooked for a wee while and the rice was looking a bit translucent in meant a glass of white wine...and a generous pinch of saffron...
...then, ladle by ladle I added the hot chicken stock, making sure it was absorbed before adding the next ladle...just look how creamy the rice is looking...
...a couple of handfuls of frozen peas...some butter and parmesan and all done!
It was delicious, and only took about 30mins to make!! Although based on a traditional Risotto Milanese recipe, it reminded me of a Spanish Paella with a twist...and i will definitely be making it again...I may even push the boat out and make the original Milanese to go with an ossobuco or something similar...

If you have any leftovers, or make a bit more (as I like to do) you could always have a go at making these lovely arancini...
