Melting Moments...Lunch Box Bakes #3

Part of the busy weekend was spent baking...as usual! The cookies that were baked earlier were devoured on Brighton Beach as an afternoon snack, so something was needed to fill the gap in the lunch boxes!! Enter new cook book number one! 500 Cookies...
There was only one thing I could do...bake some cookies!!
After much debating, Melting Moments were chosen...a pretty basic mix of softened butter, icing sugar, vanilla and flour...




So I used my trusty Kenwood chef, and whisked 225g unsalted butter with 50g icing sugar...added 1/2 tsp vanilla, whizzed again, then folded in 225g plain flour and 3 Tbsp cornflour...This was supposed to make a dough that could be piped from a bag, but mine was too stiff, so I rolled it into balls and pressed lightly with a fork! I think it would work in one of those nice cookie presses... They took about 15 mins at gas 4...

After they had cooled completely I blitzed 50g soft butter with 125g icing sugar and 2 tsp vanilla...then I filled the Melting moments and sandwiched together! 
The book adds jam into the mix, making a creamy jam sandwich, but we didn't fancy that...so...













...I dipped ours in melted milk chocolate, put them on a baking sheet in the fridge to set and then we promptly ate 5 of them!!! We had a friend over, and it's only polite to share!! So I guess I will be getting my apron on later today!
