Remember the Rainbow Cookies?...

...I think it's probably hard to not remember them...they were rather bright after all...look, here they are... and here's a photo to jog your memory...just in case...

...well as you have to trim the layers of coloured cookie dough to make a nice straight-sided rectangle to cut from, you end up with lots of straggly little off-cuts...and hey we are in a recession, so in the spirit of "waste-not-want-not"...

...look what I did with those off-cuts...

I took them all and rolled them into a ball-ish...ok more of a cuboid-ish if you want to be pedantic...but the gist of it was to freeze and use at a later date...and that date has come...well to be perfectly honest with you, it is going to be the first of a few dates...as I have only cut and baked half a dozen...just enough for an after school snack today...

 I had to let the block of dough soften a wee bit before I could cut the cookies...

 ...sliced and spread out on the baking sheet (I learnt last time to give them a bit more room)...

 ...12 minutes later and baked to perfection...

 ...so pretty...

 ...and still so bright!!...

But wow don't they look cute...more of a swirly psychedelic cookie than a rainbow now...but they will taste just as great as the first prim and proper organised batch!! Personally, I think these a more fun and funky...what do you reckon?
