Rainbow Cookies...

...for the Small Ones, of course! These cookies have been on my "To Bake" list since February...which I know is only a couple of months, but that's  quite a while for something as fantastic looking as these...

The recipe isn't mine, I stumbled upon it on these website here...but they actually originate here...so here are my take on the "Goodlife Eats" Rainbow Slice and Bake Cookie...

The first thing I will say to you if you fancy having a go at these...you need at least half a day to make them, as there is an awful lot of chilling time involved...but they are well worth the effort!! Plus you end up with extra dough in the freezer for later on, when you could just do with a sweet treat but there's none in the house...all you need do is open the freezer!! So go on...have a go!! I'm glad I did...

Now you will need to go here and either copy down or print out the recipe...I can't give you the whole ingredients, method'y' thing but I can tell you about what I did and what worked well/didn't work...if there is anything!!
What a lovely whipped up butter and sugar mix...so pale, creamy and fluffy!! Think I may be getting a bit obsessed with the texture of my butter and sugar mixes!! These are really just a basic Sugar Cookie with the added benefit of flavouring and colourings...
The flavourings used are Almond and Vanilla...and as soon as you add them the scent of marzipan hits you...(in fact after we ate some of ours, eldest Small One asked if I could do plain Vanilla ones next time!!)...
Then after the mix is mixed...sugar, butter, flour, salt, baking powder, and flavourings...you need to split into however many colours you are doing...as these are rainbow cookies (and I didn't want Indigo - I split mine into 6)...and I used the scales to help me get them pretty even...
...then out came my gel colours...I sooooo love my gel colours...as I have said before, you need such a teeny tiny amount to give the most amazingly vibrant colours!!
...then bag up the dough...
...and chill in the fridge for about 2 hours...(the dough, not you!!!)
 Once it has firmed up...you get a-rolling...you need it to be about 6x9inches...and it will get incredibly sticky, so literally only take out the colour you are working with, use some icing sugar to roll and work fast!! Layer the colours, and use a bit of water to stick the layers together...
 ...Trim up the edges, wrap in cling film or pop in a bag...and freeze...for another 45mins or so...it will help with the cutting...(Oh and keep the off cuts for another time...mine are all mixed up, and shaped into a block, ready to cut from again...this time they colours are going to be swirled though, as I mixed them up a bit!)
 ...Once chilled enough in the freezer, take out and cut (along the short edge) slices that are about 1/4 inch wide...
 ...cut the slices in half and space out on lined baking sheets...then pop back in the freezer again...this will help to stop the dough spreading too much as it bakes...
 ...the unused block of dough can be bagged again and frozen for a few weeks...
 Bake in an oven at Gas 4/160c for about 12 minutes...they will spread a bit (I think next time I will space mine a wee bit further apart) and be soft as they come out of the oven, so let them cool on the trays for about 10mins...
 ...before transferring to a rack...
 ...Aren't they just amazing...
 ...and they taste fantastic too...
My Small Ones can't wait to take some in their lunchboxes tomorrow!!! They are dying to show their friends!!

So they make take a bit of time to make...and they may be for a day when you have no deadlines...but they are great cookies...in fact the base Sugar Cookie recipe is one I will use again...and I am already thinking about Red, White and Blue Diamond Jubilee Cookies for June!!
