Ice-Cream Cup Cone Cupcakes...



...I've been wanting to have a go at these for a while now, I bought the cup cones ages ago...(in fact they are going to need eating up soon!! That's how long ago it was!!)...


Well with the stormy weather we've been having here, I figured it was the perfect time to make some for the smallish people...
I started with my basic sponge cake mixture, but made a 3egg mix (I didn't want to make loads, just a few as testers really)...so for that you need:


*3 Eggs (I always use large these days)
*175g Butter, softened
*175g Caster sugar
*175g Flour, self-raising or plain is fine (just add some baking powder if using plain)
*1 tsp Vanilla
...and that's it really, I like to use pretty soft butter...which I then cream with the sugar until as pale and fluffy as I can get it...last night I decided not to get the Kenwood out, but to go with the hand whisk instead (especially as I was using smaller amounts of ingredients)...think I got it pretty pale and creamy!!
The Smallish Ones wanted some chocolate chips added...so I found some leftover Christmas coins in the drawer and chopped them up to use...(Yes, I did just say Christmas chocolate and leftover in the same breath!! Amazing as it seems, my Smallish Ones don't actually eat that much of it!)
I forgot to take pics of the next couple of steps, as I was so intent on getting them in the oven ASAP...but basically add in the eggs and flour gradually and mix...I was asked for some red and white cake mix for St George's Day (they are both in the St George's Day Parade this Sunday with Guides and Cubs...)...so the chocolate chunks went in the white cake batter, and some red gel colour went in the other half...the mix was divided between the cup cones and a few extra cases...and swirled a wee bit... 
...the oven was at Gas 4/180c and they took about 20-25 mins to cook...
...as they went in the oven I was a bit concerned that I had put too much batter in each...
...which as it turned out was right!! They had exploded out over the tops and down the sides!!! Ooops!!!
...not the most attractive set of cupcakes I've made!!!
...But they do look like ice-creams...
...after a little trim around some of the edges, a swirl of chocolate buttercream and a mini flake later and voila! Chocolate Ice-Cream Cup Cone Cup Cakes!!! (Try saying that after a few vinos!!!)
...the Smallish Ones loved them, and I will make them again...
...But with less batter in each...
...and possibly some flavourings, crushed strawberries and pink buttercream?? Chocolate sponge with the chocolate swirls?? Mint choc chip?? The possibilities are endless...
