#4 Saturday Night...means...

...It's "Fake-Away" night...you know what I mean, a "take-away" made by you...or in this case, me...

So, what was on my menu last night?

1. Egg Fried Rice
2. Chicken Chow Mein
3. Sweet and Sour Chicken Hong Kong Style
4. Green Vegetables in Oyster Sauce

And the last dish on my menu was...Green Veggies in Oyster Sauce...This was another simple dish to make, and one that can be easily 'tweaked' to suit your tastes...

We fancied some Pak Choi, so that's what I based this dish around...
To feed 4 as part of a larger meal you will need:
*Veg oil to fry
*1/2 large onion - sliced finely
*1 clove garlic - finely chopped (not crushed)
*Pack Choi - the supermarket near me sells them in packs of 2-3
*Another green veg of your choice - I used a head of broccoli, you want a veg that won't be soggy or mushy when cooked, mange tout or sugar snaps work well...
*Oyster Sauce - I used about half a 150ml bottle...
*Soy sauce - to taste
*Chicken/Veg stock - only about 100ml...I used the strained liquid from cooking my noodles!!

First of all soften your onion and garlic...add in the broccoli and cook for about 5-8 minutes on a medium heat, stirring from time to time...
add in the pak choi and the oyster sauce...stir to coat...
add a little stock and some soy sauce, taste and add more soy as needed...
...remember to taste all the way with this dish, as it can easily become over-salted...
serve as soon as cooked...
