...It's "Fake-Away" night...you know what I mean, a "take-away" made by you...or in this case, me...
So, what was on my menu last night?
1. Egg Fried Rice
2. Chicken Chow Mein
3. Sweet and Sour Chicken Hong Kong Style
4. Green Vegetables in Oyster Sauce...
That's right we had a Chinese Fake-Away...which I am going to share with you guys...well, the recipes at least, the food...well that's long gone!!
Let's start with Number 1 on the menu...a nice and easy Egg Fried Rice...super simple, and only takes a wee bit of thinking ahead...
To make enough for 4 as part of a larger meal you need:
*250g rice - long grain is the best
*2 eggs - beaten
*Veg oil - enough for frying
*Soy sauce - to taste
The thinking ahead bit is the fact that the rice needs to cooked, drained and cooled before you fry it, so I always cook mine in the morning, then it is done, out of the way and will be cold in time for the frying...
In my eagerness to get the food to the table, I seem to have forgotten to take any photos of me actually cooking the eggs and the rice together!! But take my word for it, it is the easiest of dishes to make...when you are ready to finish the dish (that is just before you want to serve it) heat some veg oil in a large pan and add 2 beaten eggs...stir so that they scramble a little...about 2 minutes or so...and then add in the cold rice, keep stirring so that the rice gets mixed into the egg...you just need to do this until the rice is heated through...add a splash of soy sauce, stir again and serve...
It should look a little like the picture above...which is mine, not a take-away!!...and to make it all a bit more fun, I served it in take-away dishes!!
