Stuffed Aubergines...

So after a bit of a break in transmission...the last recipe I posted was way back in August...so almost 3 months ago...I decided to get my butt in gear and get posting...I have 6 recipes all waiting o have photos edited and words typed...so here is the first of those, a simple veggie supper that we really enjoyed...


The recipe is stunningly simple, and can easily be put together for a quick weeknight dinner...or enjoyed as part of a larger more leisurely weekend feast...
Start by getting enough aubergines...you need 1 per person if doing as a meal in itself (or half per person if part of a larger multi-dish meal)...cut the aubergines in half, score the flesh, and pop them in a tin in the oven Gas 6/200c for about 20 mins until starting to soften slightly...scoop out the flesh, dice it and add to a pan along with...
...some sunblush tomatoes, diced courgette, lemon zest and juice (to taste) a few chilli flakes, a pinch or 2 of dried oregano (or fresh if you have some) and some diced hard goats cheese...cook until veggies are softened enough...
...fill the hollowed out aubergine 'shells'...
...top with some breadcrumbs and extra lemon zest (if you like it lemony) and pop back into the oven until the breadcrumbs are golden brown...

Unfortunately, I completely forgot to take the finished dish pics as we were in such a hurry to eat them!!!! I served mine with a crisp green salad and a glass or 2 of white wine!!! and will definately be making them again....
