Roasted Stuffed Pork Loin...

This is a really Autumnal feeling kind of dish...It's tasty, uses few ingredients and o top of all that, it's quick enough for a midweek dinner...


I got the recipe from a magazine somewhere, sometime, but can't find the original, so am wondering if it was at a friend's house that I saw it???!!! If it is in a magazine anywhere...apologies in advance, but it is such a great dish, I just have to share...

You need a pork tenderloin...the one I had fed 3 adults, and was a pre-packed supermarket one that weighed about 350g...trim it of any excess membrane...and split the loin almost in half (I guess it's still butterflying it)...
...take some red pesto...I prefer red pepper to sundried tomato pesto...and spread liberally on both sides of the butterflied tenderloin...
...take a ball of mozarella and tear it into small pieces...scatter these in the middle of the pesto...
...now fold it so you have a pesto, mozarella pork tenderloin sandwich...
...and then you need to wrap it in some parma ham...make sure you have enough to cover the whole loin roll...
...once the roll is assembled place in the middle of a large roasting tin...
...then you add the accompanying veggies...in this case, new potatoes that have been cut into wedges, chantenay carrots and beetroot wedges...butternut squash or pumpkin would be great, as would parsnip chunks...
...drizzle with some olive oil (veggies only) and roast in a fairly hot oven (gas5-6/190-200c) for about 35 mins or until the parma ham is crisp and the pork just cooked through...
...the veggies should be crisp by now too...to serve, slice the pork into rounds, place veggies and meat on plate and drizzle pan juices around...
I have to admit I was a bit worried by the lack of green veggies on my plate, but after eating decided they weren't actually needed...the meal was enjoyed and has gone onto the make again list...

  1. That looks utterly delicious and reminds me of a Pork Wellington I made which was wrapped in Parma Ham. I found your blog by accident as I was checking on google the spelling of appetising:-)

    1. Thanks Camilla it is a delicious meal...hope the lack of photos on the blog hasn't put you off looking further...am in the process of re-adding them after accidentally deleting them!!!
