Mini Victoria Sandwiches...



I treated myself to a new tin a while back from the fab Lakeland (one of my fave stores!!) and have only just gotten around to trying it out!! 

...and am I glad I did...it is such a fantastic and versatile tin...and the little loose bottoms are great...it is also very non-stick...

...but that didn't stop me giving it a little spray with some cake release...just in case!




...I used the recipe from Lakeland's website, rather than any other, but to be honest with you it was pretty much the same as any other!! Equal amounts (175g) of flour, sugar, butter and eggs with a dash (1 tsp) of vanilla and a pinch of salt...easy!! The 3/4 full tins went in the oven at Gas 4/180c for about 15 minutes or until a skewer emerges from the center nice and clean!...



 ...the cakes were left to cool in the tin for a few minutes...Mmmm they look lovely and golden with a nice rise too...



 ...before pushing them out (fab idea having individual loose bottoms!!!) effortlessly and leaving to cool on a rack...

...I actually decided to leave them all un-iced/un-filled and just make them up as needed...so later that evening...I took some and cut in half....a serrated knife is best...


 ...gathered my fillings...buttercream - I go on the basis of 600g icing sugar to 125g unsalted butter plus 1tsp vanilla and milk to get the consistency required...in this case I halved the amounts, whipped it up earlier and popped it in an old take-away tub in the fridge until needed!! (it will keep like this for a few days, just take out to soften slightly before using)...jam and fresh fruit...in this case both strawberry....(although am thinking cherry, raspberry or apricot all sound pretty yummy too!)


...I layered the fillings in...


....looking good...


 ...topped them off...


 ...and finished with a dusting of icing sugar...they went down a treat...


 ...and the next day the 2 Smallish Ones decided to do their own filings/toppings!!


 ...using up odds and ends from the cake decorating drawer!!


...these mini wonders didn't last long at all in our house...and I have been asked to bake some more for the guests that are coming this weekend...I might try lemon curd or even a chocolatey version too...and as for the tin...am thinking mini cheesecakes need trying at some point!!!
