Wrapped and Stuffed Chicken Breasts...

...and I have to say right away they were delicious!! No beating about the bush with these, all of us devoured them...yup, that's right ALL of us (including the 2 Small Ones!!!). 


I made two different versions of this dish, so that we could taste and choose our favourites...they are both pretty quick and easy to put together...and look quite special too, I think I might make them as a dinner party dish some time...


...the first ones were stuffed with some fresh basil leaves and mozzarella...



...simply take your chicken breast filet and slit it as if butterflying it, lengthways, through the thicker side...
...take a few fresh basil leaves and some slices of mozzarella and place them in the opened -up chicken breast fillet...
...fold the chicken so that the basil and mozzarella are now hidden inside, and using some parma ham, wrap the fillet so that the open side is covered as much as possible...I also slipped a basil leaf under the parma ham, purely to make it look pretty!!...
...the second type starts the exact same way, by making a slit along the thicker side of the filet...but this time spread some garlic and herb soft cheese in the middle...
...fold up and using a few rashers of pancetta...
...carefully wrap the chicken until the pocket side is covered as much as you can...
...two of each type waiting to cook...
...to make sure I had a nice crispy outside to my fillets, I popped them in a hot non-stick pan to just brown them all over...it only took a few minutes on each side...
...and then popped them onto a non-stick tray and into a hot oven...about gas 6/200c for about 20-30 minutes...
...or until juices run clear when a sharp knife is stuck into the thickest part of the chicken...the cheese will ooze a bit, but that's fine, just scrape it up and pop under the fillet when you serve it...
...we actually had ours with some steamed veggies and mashed potatoes...but if I was doing for a dinner party I might think about sauté potatoes...but however they get served they will taste great!!
