Nigella's Saffron Chicken Pilaf...

 The week before last I was feeling down with the terrible weather we've been having this "Summer" so was flicking through some of my cookbooks looking for something light and Summery to cheer me up, and I came across this...
I had made it once before a few years ago now, and remember liking it...but obviously new books were purchased and the whole thing erased from my memory...So I decided it deserved another go!! I'm glad I did, as it totally lifted the mood, and made me almost feel that Summer was here...(almost!! If you ignore the rain and flooding all over UK!!)


You can actually find the recipe online here at Nigella's Website...but don't be put off by the long list of ingredients...as it's a lovely tasty dish...that takes about 30 mins to cook (plus an hour for marinading)...I hope you enjoy it as much as we did...
...Marinading the chicken in the yogurt, lemon juice and cinnamon helps to make it not only tasty but moist and tender too...
...toasting the mix of nuts adds another taste and texture dimension to the finished dish...
...doesn't the basmati rice glisten beautifully...I was a bit worried it would over-cook with the slightly longer than normal cooking time...but it didn't...
...I love saffron (I think I may have mentioned it before?)...just look at the colour...fab!!
...make sure you cook the chicken in batches, at a fairly high heat, as it means you get a nice crisp outside, rather than it 'stewing' in it's own juices...
...once the rice is a beautiful sunny yellow and all fluffy and cooked you can add the rest of the ingredients...
...the toasted mixed nuts...
...the golden fried chicken...
...and some sliced pistachios and fresh chopped parsley...
...the perfect summer dish...and all in one pan too...what more could you ask for...?
...apart from seconds that is?!?...
