Mexican Feast...

...we had another of our 'Dinner In' with friends last night...this time the theme was Mexican Feast Night...
I used my favourite Mexican cookbook "Mexican Food Made Simple" by Thomasina Miers...I used it a while ago to make some dishes for just the two of us, and based on that evening's success, chose to try some new dishes and make some of the favourites from that evening too...

We started with some chips and dips...I made guacamole, and salsa...and there was some soured cream too...
This is the best Guacamole I have tasted...
...and I don't normally like salsas, but this Roasted Tomato Salsa is to die for...
Then we moved to the table to dive into my "dig in and help yourself" Mexican Feast...
There was Frijoles Refrito...sprinkled a la Wahaca with crema and cheese
...with some Chicken Tinga...
...and the weird but rather wonderful Picadillo...
...with a little of the Green Rice to go alongside it all...
The only thing missing at the end of it all was some of Wahaca's amazing Churros and Hot Chocolate...which I had one of the times we visited the restaurant...and I will make at some point in time...but we struggles with the dessert that Jules brought over for us...a really nice Italian Zuccotto...that she made with cream, chocolate, hazelnuts, fresh raspberries and Grand Marnier all encased in madeira cake...Mmm mmm mmmm....All in all a great "Night In"...lots of good food, great company...and just a little wine...
