Focaccia...

My bread-machine cheat method...I haven't made Focaccia before...so was pleasantly surprised by how easy this method was...
I started by following the instructions and ingredient amounts in the little recipe book that came with my bread machine all those years ago...
the ingredients for the dough are:
*1/2tsp yeast
*300g strong white bread flour
*1tsp salt
*1Tbsp olive oil
*200ml water
(I also sweated off some red onion and picked some fresh rosemary leaves for the topping)


So you throw all the ingredients for the dough into the bread machine and set it to go on the pizza dough setting, which on my machine only takes 45 minutes...
Once the dough cycle finishes, tip your dough out onto lightly floured surface and knead for a while...you will know when you've kneaded enough...the dough will stretch out and not snap...
...get yourself an oiled baking tray about 30x25cm and push the dough out into a rounded rectangular shape...
...you don't want it right in the corners, it needs some room to grow as it proves...I had some red onions that were sweated off and some fresh rosemary leaves that I pushed into the top of the bread, and some olive oil was drizzled over the top before it was put in a warm place to prove...I left mine for about an hour to an hour and a half...
...in which time it grew quite well...I drizzled a bit more oil over it and sprinkled some flaked sea salt over the top...and...
...I baked it at Gas 5/190c for about 20 minutes until the edges were crispy and the middle looked well cooked and no longer 'doughy'...
...we had it with my Med Veg and Chickpea One-Pot and some couscous...and it was really tasty...next time am thinking black and green olives with some herbs as a topping, or even chopped olives mixed through the dough as it is kneaded...mmmm mmm making myself hungry now!!!
