Green Glorious Green...Part 2...






...after the Cake Pops and Cake Balls were made, I had a whole 8inch cake left over and was left wondering what on earth to do with it...then it came to me...Mini Green Velvet Cakes...












So armed with a fluted circular cookie cutter I attacked the remaining 8inch Green Velvet Cake and ended up with seven Mini Green Velvet Cakes!! But one got ruined so fell by the wayside leaving me with six cakes that looked remarkably like six well-risen, green scones...
 Which I then sliced through the middle, added a touch of my cream cheese frosting, sandwiched back together again... Hubby wondered if I was making spinach cakes!!
 ...Then I frosted the tops (just swirled a bit more cream cheese frosting with a knife),  sprinkled some of the sparkly green sugar...and there you have it...
 ...dainty little Mini Green Velvet Cakes...
 Anyone for afternoon tea?
PS...the sugar was simply some demerera sugar that I coloured using the Wilton gel colourings...Just add a bit at a time, use a fork to mix it through, and when you're happy with the colour lay it out to dry...I coloured it the night before and left it to dry overnight on some kitchen roll on a baking tray...It can be stored in a clean airtight container for a few days...but I made just enough for the job in hand...so had no leftovers this time!!
