Marbled Cheesecake Brownies...

...a little square of chocolatey cheesecake heaven...Now all us here at Sew Appetising love a brownie of three!! But we also quite like a decent bit of cheesecake too...so what could be more perfect than a sneaky combo combining both?

...well in my opinion not much...these cuties were simple to make, even though they did involve two mixes, and are very easy to eat!! I had seen a variety of recipes for this style brownie, and after a long search and the reading of many many recipes I chose this one here...from The BBC Good Food website...for a couple of reasons, 1, I had all the ingredients without needing to pop to the shops!! and 2, they looked easy to make (oh and they looked pretty good too!)


Unfortunately, the marbling didn't go too well, but the taste is all there!! We decided to have them as our Father's Day pudding after dinner yesterday...they were a little bit warm from the oven still, and deliciously gooey in the middle...in fact they were so nice we had two each!!! Well it was Father's Day after all...the perfect excuse for a little decadence!!
As I said they do involve two separate mixes being made before baking, but both of those are pretty simple to whip up....


First of all make the cheesecake layer...for this you need to whisk together 2 large eggs, 400g of cream cheese, 125g caster sugar and 1 tsp vanilla...
...you will end up with a creamy, cheesy, vanilla flecked mix, I popped mine in the fridge whilst making the brownie mix... 
...for the brownie bit you melt 200g dark chocolate with the same amount of unsalted butter...I microwaved mine, checking every 30 secs so it didn't burn, but you can also melt it in a bowl over a pan of boiling water...
...in another bowl whisk up 3 large eggs and 250g caster sugar...
...until pale, creamy and the volume has increased slightly...you add the chocolate and butter mix to this, stirring well, and then in goes 125g of plain flour...and i totally forgot to take pictures of those 2 steps!! Oooops!!
...you need to preheat your oven to Gas 4/180c and grease and line a tin, I used my standard traybake tin which is 18x30x4cm...it's my go to tin for all my tray baking needs!!
Then you have to add the mixtures...I put a layer of brownie mix, about 2/3s of it then a layer of cheesecake mix, about 2/3s again and then 'blobbed' (very technical term note!!) the two mixes around and swirled with a knife...the marbled effect wasn't as great as I hoped, but the cheesecake mix was rather runny!!! Into the oven it goes and...
...45 minutes later it should be baked...test with a skewer first to make sure...mine seemed to erupt slightly in the middle, but as it cooled the cracks almost disappeared...
...leave to cool in the tin...until properly cold!!!
...turn out, cut into 16 and enjoy!!!
As I said at the beginning, we had ours as a pudding on Fathers Day, but the two Smallish Ones have also been eating them as a snack in their lunch boxes this week!!!
