Coconut Milk Cake...

...have had my eye on this one for a while now...I got Marion Keyes new recipe book "Saved by Cake" out of the local library a few weeks ago, and have only just found some time to bake one of the cakes from it...


...and as luck would have it after making my yummy Aubergine and Lentil Daal on Friday I had some coconut milk left over...in fact the perfect amount for making this cake...which turned out to be a simple cake to make (if you don't count the rookie error made by me...but more about that later)...
...you start off by creaming the butter (170g) and sugar (300g caster)...you want a pale, light and fluffy mixture..
...add to that some eggs (4) and vanilla (1Tbsp)...
...it will look pretty runny at this stage but carry on...
...finally mix together, in another bowl, the flour (250g self-raising), a pinch of salt, some baking powder (3/4tsp) and the desiccated coconut (50g) and add to the butter, sugar and egg mix...along with the coconut milk itself (200ml)...This is best done in thirds, so you add third of the flour mix, third of the coconut milk etc... 
...pop it into your tin...the book shows it as a bundt cake, which is probably because of the batter being so wet, and the middle ring helping to cook the cake all the way through...just like the vanilla bundt I made here...you then bake it at Gas 3/170c for about an hour, or until a skewer comes out clean...leave to cool in the pan...all the way to cool... don't get impatient like me and try to tip it out too soon...
...as you can see from the picture, I was a little too eager to get mine out of the tin, and ended up with some of it sticking and having to patchwork it back together again...
...But that didn't alter the fact that it is a very tasty cake indeed...the recipe has a syrup made from heating the other 200ml of coconut milk (if you're starting with a whole tin) and adding 40g light soft brown sugar...you spike the cake while still in the tin and drizzle with half the syrup, letting it soak in before adding the rest...as I was starting with half a tin...I left this out, and I have to say the cake didn't need it...it was delicious just as it was...so although mine wasn't the prettiest of bundts this time, it was certainly tasty...and I would recommend having a go if you like coconut...
